Sausage and Cheese Plate Recipe

This recipe is a staple around Memphis at any bar, tailgate or football party. If we’re having a get-together, there is going to be a sausage and cheese plate… it’s expected around here! Plus, it’s about as easy as it gets! All you need is some smoked sausage, cheese, a really great BBQ Rub and BBQ Sauce – I use my own Killer Hog’s BBQ Rub and Suace. Your smoked sausage is already fully cooked, so your just heating it up. You can do this in the oven or even on your stove… but if you can do it on your smoker or grill it gives it much better flavor. I like to sprinkle a little dry rub on it and throw it on my smoker 250 for around 1 hour. If you are cooking your smoked sausage on a grill, you want to flip it every 10 – 15 minutes. If you are smoking your smoked sausage on a smoker, you will flip it every 30 minutes. sausagecheeseplate1 Once your smoked sausage has been on for about 45 – 50 minutes, you can glaze your smoked sausage by simply brushing on a good BBQ Sauce. Then allowing the bbq sauce to glaze on the smoked sausage for 10 – 15 minutes. Once the sausage is done, it’s time to assemble your sausage and cheese plate. Just slice your smoked sausage and add it to a platter along with the cheese of your choice, then give the entire plate a good dusting of BBQ Rub. To make a great sausage and cheese plate, you can add whatever accompaniments you like. For our sausage and cheese plates, we like to serve them with pickle spears, pepperoncini peppers and saltine crackers. We always have some type of dipping sauce to go along with our sausage and cheese plates. You can use BBQ Sauce, Spicy Mustard – whatever you like. Here is my recipe for a Mustard BBQ Dipping Sauce:
  • 2oz yellow mustard
  • 2oz spicy brown mustard
  • 4oz Honey
  • 2oz BBQ Sauce
  • 1oz Cider Vinegar
  • 1 tea salt
  • 1/2 tea granulated garlic
  • 1/2 tea black pepper
  • 1/2 tea crushed red pepper
Just mix it together and allow it to sit in the fridge for a few hours to let all the flavors come together. Once your sausage and cheese plate is complete, it’s time to serve. You will be amazed how quickly this appetizer disappears.
