This creation came from my buddy Mark Lambert pitmaster of Sweet Swine O’ Mine and recent winner of the 2013 Memphis in May World BBQ Cooking Contest. It combines two of the finer meats you can smoke. BBQ Bologna and Pulled Pork… (at least to a Mississippi boy)
To create the sandwich, you take a jumbo size bun and lay down a thick slice of BBQ Bologna. On top of the bologna pile up as much pulled pork as you can stand for me it’s about 1/3 lb (on the first sammich!)
Next drizzle on The BBQ Sauce as little or much as you desire.
Top the whole thing off with a heaping mound of coleslaw and the top bun. (you can get the recipe for my coleslaw here)
You better roll your sleeves up for the Mississippi Peace Maker because it’s going to get messy!
