Potato Salad is a perfect side dish for barbecue. Every time someone is firing up the grill it seems someone is bringing a store-bought potato salad. But making a fresh potato salad at home is really easy and it will taste so much better than anything you can pick-up at the store.
With this Southern Style Potato Salad I garnish it with bacon on top too – so that gives it even more flavor and a great crunch. This is one potato salad that is sure to get you a lot of compliments.
Southern Style Potato Salad with Bacon Recipe:
– 10-12 medium Red Potatoes (boiled and cubed)
– 2 cups Mayo
– 4 boiled Eggs (grated)
– 1 tablespoon Mustard
– ½ cup Sweet Pickles (finely diced)
– 5 Green Onions (finely diced)
– 1 large stalk Celery (finely diced)
– 1-2 teaspoon Salt
– 1 teaspoon Black Pepper
For Garnish:
– Paprika
– 2 Green Onions (finely diced)
– 1lb Bacon (cooked, drained and crumbled)
First clean your potatoes and remove any bad spots. Then get a large boiler and bring water to a boil. Add 1 tablespoon Salt to water. While water is coming up, cube your potatoes. When the water reaches a rolling boil, add potatoes and boil for 10 – 15 minutes. When potatoes are fork tender remove from water and allow to drain.
Combine mayo, mustard, egg, pickles, onion, celery, salt and pepper in a separate bowl. Taste and add more salt and pepper if desired. Once combined fold dressing onto potatoes lightly until all potatoes are covered.
Then it’s time to top this potato salad. First sprinkle paprika over the top, then crumble 1lb of cooked, drained and chopped bacon over the top. Then add 2 chopped green onions to the top for color.
Now you are ready to serve this Southern Style Potato Salad with Bacon.
