Here are a few videos we shot that will take you through the process of trimming a pork shoulder. You want to leave the right amount of fat to give the meat flavor, but trim enough of the fat and connective tissue so your smoke and the flavors in your rub can penetrate the meat.

This process is the "shoulder trimming" method we use to trim our shoulder for bbq contests. These videos were shot at a KCBS contest where our BBQ Pork came in 2nd Place. Most teams cook pork butts at KCBS contests, but for this one we cooked whole shoulders... and it paid off.
