Ingredients
- 3lbs Whole Chicken Wings
- ½ cup Killer Hogs AP Rub
- 2 Tablespoons Chinese 5 Spice
- 2 teaspoons Crushed Red Pepper
- 16oz General Tso’s Sauce* recipe to follow
General Tso’s Sauce
- 1 cup Brown Sugar
- ½ cup Soy Sauce
- ½ cup Hoisin Sauce
- ½ cup Rice Vinegar
- ½ cup Water
- 1 Tablespoon Vegetable Oil
- 1 Tablespoon Sweet Chili Sauce
- 1 Tablespoon Crushed Red Pepper
- ½ Tablespoon Garlic Chili Paste
- 2 Tablespoons Green Onion chopped
- 3 cloves Garlic minced
- 1 Tablespoon Fresh Ginger minced
- 2 Tablespoons Cold Water
- 2 Tablespoons Corn Starch
- Directions:
- 1. Heat 1 Tablespoon of vegetable oil in a small sauce pot over medium heat; sauté garlic, ginger, and green onion for 1–2 minutes.
- 2. Add the Soy Sauce, Hoisin sauce, rice vinegar, water, and brown sugar. Stir to combine
- 3. Stir in the sweet chili sauce, garlic chili paste, and crushed red pepper. Continue cooking until mixture reaches a slight boil.
- 4. In a separate bowl combine the cornstarch and cold water. Slowly add the slurry to the sauce pot while stirring. Bring the mixture to a boil and reduce the heat. Pour the sauce into a jar and allow to cool.
Instructions
- Prepare Yoder Smoker or other grill for indirect cooking at a temperature of 300⁰. Use cherry pellets for wood smoke (cherry wood chunks if other type grill/smoker is used).
- Combine Killer Hogs AP Rub with Chinese 5 Spice and Crushed Red Pepper; coat both sides of the chicken wings with this mixture.
- Place wings on the grill and smoke for 45 minutes then turn each wing over to evenly cook both sides.
- After 1 hour 10 minutes glaze each wing with General Tso’s Sauce on both sides and continue to cook until wings are tender. Internal temperature should be at least 165⁰ and juice should run clear. Total Cook time about 1:20 minutes.
- Arrange the wings on a large platter and garnish with Sesame Seeds and chopped green onion before serving.
