Here’s a quick treat that’s good for the holidays or just for snacking… Smoked Nuts
I use pecans, almonds, or cashews for this recipe, it’s prepared on the smoker, and it makes a great gift too.
Here’s what you’ll need:
- 1 pound of nuts (Pecan halves, almonds or Cashews)
- 4 Tablespoons Butter
- 1 Tablespoon Worcestershire Sauce
- 2 Tablespoons Granulated Sugar
- 1 teaspoon Seasoned Salt
- ½ teaspoon Cumin
- ½ teaspoon Garlic
- ¼ teaspoon Cayenne Pepper
Prepare the smoker for indirect cooking using a mild wood for smoke like apple or cherry. The temperature needs to be around 300 degrees.
In a small bowl melt the butter in the microwave for 1 minute. Stir in the Worcestershire, Sugar, and remaining seasonings. Mix well.
Place the nuts in a mixing bowl and pour the mixture over. Gently stir until they are coated evenly.
Spread the nuts on a pizza pan or a small-mesh wire rack in a single layer and place on the smoker. Cook for 45 minutes to 1 hour stirring every 15 minutes. Allow the nuts to cool after smoking and seal in a container for up to 3 weeks.

When you say “seal in a container for up to 3 weeks”, do you mean that’s how long the nuts will last, or wait until then to try them?
I’ve tried this recipe a couple of times on my pellet grill and find that 300F is too hot. Within 30 minutes many of the nuts are burnt.
