Tomorrow is going to be huge in the world of competitive barbecue. Huge. It is the start of the 3-day, 2011 World Championship Barbecue Cooking Contest, better known in smoker circles simply as “Memphis in May,” the name of the larger festival it anchors.
This porcine party is so important to bbq lovers that even record flooding and Mother Nature’s wrath could not stop it. This year’s competition has been moved from its normal spot at Tom Lee Park to the drier Memphis Fairgrounds, but every single delicious part of the schedule is on track to operate as normal.
